This variety is an express creation of Colombian terroir, featuring disease resistance and strong stone fruit characteristics.\u003cbr\u003e\u003cbr\u003eThis lot undergoes a 50-hour anaerobic fermentation as whole cherry before being pulped and undergoing a second fermentation with added spices, complimenting the inherent flavors of caturron. After this fermentation, the coffee is dried for 10 days. \u003cbr\u003e\u003cbr\u003eThis unique combination of terroir, fermentation, infusion and processing creates a cup that features a kaleidoscope of tropical fruit flavors. This coffee is truly exceptional and benefits from 3 weeks of rest minimum, opening up through weeks 4 and stabilizing here for several more weeks.\u003cbr\u003e\u003cbr\u003eWe taste:\u003cbr\u003e\u003cbr\u003eHibiscus Agua Fresca,  accompanied by strong pineapple and mango notes. The mouthfeel is structured and consistent from hot to cold, allowing cinammon and clove to linger in the aftertaste.
