Chelchele - Yirgacheffe - Washed Process Ethiopia

This washed lot comes from the Chelchele washing station within the kebele of Banko Chelchele. Here, coffee from hundreds of smallholders from 5 surrounding bekeles are purchased and processed. 

This coffee is a perfect representation of the yirgacheffe profile we all know and love; it's floral and citric and bright and exceptionally clean. There is a 36-48hr ferment, with extremely high flavor fidelity due to dense beans and slow maturation caused by colder temperatures and less oxygen. 

I taste:
Sweet fresh harvest white tea and meyer lemon off the aroma transform with sweet honey. On the palate expect refreshing and zingy meyer lemon acidity complimented by creamier notes of honeydew and nectarine. As the cup cools, korean pear and jasmine green tea notes settle in complimented by simple syrup sweetness and a tingly lemongrass and spearmint aftertaste.
