Paola Trujillo - Patio Bonito - SL28 Washed
Patio Bonito is a hardworking and innovative family-run farm in Caldono, Cauca. Paola spent many years previously working as a cupper and buyer in Nariño and Huila for an exporting company. After returning to the farm in 2022, she has innovated how they process their washed and natural coffees, including “thermal shock” and anaerobic modulations to their processes.
Paola Trujillo had pursued chemical engineering before returning to the family farm to utilize her knowledge and expertise to revolutionize how they grow and process coffees. The results have been nothing short of stunning and she now hosts seminars are trainings for other producers to implement these techniques so that they might increase their coffee quality and secure higher prices for their already stellar lots.

This SL28 lot is washed, with an interesting and subtle introduction of a thermal shock process, where coffee cherries are introduced to temperature extremes during fermentation. This causes new and interesting flavors not typically possible in traditional fermentation through boosted acidity.
We taste:
Aromas of mixed citrus and subtle plum and cherry jam sweetness waft from the cup. At first sip, key lime acidity and sweetness present with hibiscus tea subtlety in the aftertaste. As the cup cools, there is a honey and panela sugar sweetness combined with tropical fruit notes of kiwi and grilled pineapple.
