This coffee estate is located in the Incahuasi district of the Cusco region of Peru. At the foot of mount Apu Choqesafra, a sacred mountain with profound spiritual significance in the area.
The high altitude and unique geographical conditions, rarely seen in other coffee producing regions of Peru, give these estate coffees a distinctive and unique flavor profile, making them one the most representative specialty coffees of the Incahuasi region.
This combined with SL-9, previously endearingly called Inka-gesha, provides this coffee a dynamic and exceptionally unique flavor profile. Expect florality, bright citrus, balanced sweetness and complex mouthfeel.
This extremely high density and lightly roasted coffee requires adequate rest for maximum flavor expression; we recommend at least 4 weeks rest, with flavor improving through weeks 5 and 6 before stabilizing and remaining excellent for several more weeks.
We taste:
White florals like jasmine and orange blossom on the nose, complemented with the aromatic sweetness of honeysuckle, chamomile and brown sugar. When hot, expect bright citrus notes of grapefruit and meyer lemon that transform into dragonfruit and fig notes. As the cup cools, sweetness is amplified and notes of chamomile tea, pomegranate and elderflower present themselves
