Qillu Rumi is located in the Inkawasi district of Cusco, nestled at the foot of the sacred and spiritually significant APU Choqesafra mountain. Situated at a high altitude rarely found in other Peruvian coffee regions, this estate produces beans that exhibit a truly unique and unmistakable terroir.

This combined with SL-9, previously endearingly called Inka-gesha, provides this coffee a dynamic and exceptionally unique flavor profile. Expect florality, tropical fruits, exceptionally clean flavors and high sweetness.

The Cooperativa Agraria Cafetalera Valle de Incahuasi (CACVI) was founded on January 21, 2005, led by manager Claudio Ortiz Osis. Today, the cooperative unites over 500 members (both men and women) across 13 committees. Each member manages an average of 1.5 hectares of land, with an average productivity of 22 quintals (qq) per hectare.

Centralized processing plants at each committee handle the collection, depulping, fermentation, washing, and drying. The coffee is then transported to a central warehouse in Andahuaylas, Apurímac, for physical grading and sensory evaluation by professional cuppers to ensure the highest quality standards.

Located in the Incahuasi Valley beneath the Choqesafra snow mountain, local producers continue the traditional values of their Incan ancestors. They practice the spirits of Ayni (mutual aid) and Minka (collective labor), living in harmony with the natural environment.

This extremely high density and lightly roasted coffee requires adequate rest for maximum flavor expression; we recommend at least 4 weeks rest, with flavor improving through weeks 5 and 6 before stabilizing and remaining excellent for several more weeks.

We taste:
Layers upon layers of florals, chrysanthemum and white tea on the nose. Flavors of starfruit, kiwi and mango burst through the cup and cool into starfruit and dried fig. The profile is exceptionally clean, clear and bright due to meticulous processing. I could not be more excited for such a layered and complex coffee to be our send off for Peru until next season
